We've been so busy and I hope to update about our trip to Eugene, Or SOON.....
However I want to quickly share with you what I just made for dinner.
Scrambled Tofu
1 lb firm tofu (not silken)
1/2 cup chopped green onions
1/2 cup sliced mushrooms
1/4 cup slivered almonds
2 tsp liquid aminos or soy sauce
1 1/2 tsp all-purpose seasoning (I don't use this, maybe you could use some veggie broth powder or something)
1 tsp parsley flakes
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp turmeric (to help it look a little more, um, eggy, totally optional)
Either cube tofu....OR....Drain tofu in colander, Using clean hands, break off a hunk of the tofu that will fit info your squeezed hand, Squeeze tofu over colander to get more liquid out, Repeat until all tofu is squeezed and put into a bowl.- Mix in remaining ingredients. Bake at 350 for 30 minutes or pan fry in a bit of olive oil or pam-sprayed pan.

I didn't have all purpose seasoning so I just used some Lowry's Seasoning salt. I also didn't have mushrooms or green onions today. Oh well. It still turned out fantastic! I prefer it cubed, personally. I ate mine with some toast with Earth Balance and avocado. YUM
And of course, this is another JEN recipe, my super fantastic cool vegan queen friend. :)
Oh one more thing, no pictures. Camera croaked for real this time. *sigh*

lol jk...sorta.
I wish I had the want and desire and discipline even to go veg. I just like meat entirely too much!!!
