The best enchilada ever!!!!!

I'm busy writing a speech that I have to do about the role and benefit of a doula in a birth, at the local community college on TUESDAY!!! akkk and I haven't got much started, so I'm busy busy busy. Plus, I have a huge fear of public speaking that I magically have to get over in the next 2 days. ummm Sarah Taylor, are you reading this? How do you do it???

Nevertheless, I wanted to quickly share the best enchilada recipe ever. Seriously. And yes, it's vegan. But all you meat eaters, I urge you to try this and come back and tell me what you think!!! I would be surprised if someone was less than impressed.

The recipe comes from Fat Free Vegan which is my new obsession. This woman is like the queen of veganism! I've tried handfuls of her recipes and I've loved them all. This is her Mexican Lasagna or Enchilada Casserole Recipe... Click here!

Now, I had to change a few things up of course. First of all, I wasn't in the mood to measure that day. So I added as much of everything as I felt was needed. I ended up with a lot more beans than she calls for, but I liked it that way. I didn't have jalepenos, so I used diced green chili's instead (which is what I'm used to in my before-I-was-vegg-full-of-dairy-but-fantastic enchilada recipe). Next time, I'll also use diced tomatoes instead of fresh ones, only because I don't care for the taste of a raw tomato. Oh and I (at least) quadrupled the amount of garlic called for, of course. yum yum yum PLEASE try this one out and let me know how liked it!!

OH and I wanted to let you all know that I'm sorry that I'm the worst blog friend ever. I know I rarely if at all post comments on blogs lately. I've just been overwhelmingly busy. I met up with my first client last night (as her doula)-it went great but I've been preparing for that. I have this speech on Tuesday I have to prepare for. I took an entire DAY to write out a lengthy but needed to be done email to a family member a couple days ago. My son is teething...My three year old is at a stage of wanting to learn and because we're homeschooling, I feel I must take advantage of this! So I've been busy working with her a lot lately. As I mentioned briefly in my last post, my husband and I took a trip down to Eugene, Or last weekend. My husband has decided to enroll into a Bible college down there in the Fall (and go into Youth Ministry!), so we've been spending a lot of time praying and researching the area. And last, but not least, I've decided to turn an area of our home into a school room for now so we have a place to organize all of Jaden's learning materials. So I've been taking all my free time packing things up into the basement and making room. I literally have very little time on the internet. But I appreciate that people still read my blog and I'm surprised that anyone even comments since I don't ever comment on yours. :( I promise, there will come a season when I have time to sit down and read everyone's entrys and comment. What great comments you left on my blog today - you inspire me! And I love that you are becoming a doula because for my next birth (no announcements yet, I'm not pregnant) but I would REALLY love to go all natural. I had an epidural with Olivia and it messed me all up. I would love to learn more from you!!! Sarah
