


















Banana Cream Pancakes from Eat, Drink, and Be Vegan by Dreena Burton
1 1/3 cup spelt flour
1 tbsp+1/4 tsp baking powder
1/2 tsp nutmeg
1/8 tsp sea salt
1 1/2 cups light coconut milk (I used regular coconut milk)
1 cup overripe banana (about 1 large banana, sliced)
1 tsp pure vanilla extract
coconut oil to coat pan
In a large bowl, add flour and sift in baking powder. Add nutmeg and salt and stir to combine well. In a blender or with a hand blender, combine coconut milk, banana, and vanilla and blend until very smooth. Transfer wet mix to dry mix and stir until well combined. Lightly oil a frying pan. On medium high, heat pan for a few minutes until hot, then reduce heat to medium/medium low and let it rest for a minute. Using a ladle, scoop batter into pan to form pancakes. Let cook on one side for several mins, until small bubbles start to form on the outer edge and into the center. Flip pancakes to lightly brown the other side.
*I added vegan carob chips to Jaden's pancakes, but left mine as the recipe calls for. I then melted butter and maple syrup and drizzled it over the top. Yummmmmmmy, we'll definitely make these again!
