The most lucious creamy pancakes in the world!!

From Eat, Drink, and Be Vegan! <----and buy this book!

1 1/3 cup spelt flour
1 tbsp + 1/4 tsp baking powder

mix in a large bowl

1 1/2 cups coconut milk
1 overripe banana
1 tsp vanilla

mix in a blender or in a separate bowl with a hand blender

pour into large flour bowl, mix well

heat up your cast iron skillet with a bit of coconut oil, on medium high to get it nice and hot, then turn it down to med low and cook your pancakes!

I used Eat, Drink, and Be Vegan's Celestial Cream on top today. I had some leftover from the Raspberry Cornmeal pancakes I made a few days ago. Yum Yum Yum

I'm not blogging lately because I'm so busy! Today I MUST finish making Davin's birthday invites and get them sent out tomorrow.....which is my BIRTHDAY!!! Yay me! I think we're going to Olympia tomorrow so I can go thrift store shopping and out to eat at a favorite resturant of mine (Traditions in West Olympia). We're going to take the bus because it will cost us $2 total rather than $30 or so in gas! We will walk to the farmers market, the hands on childrens museum, and we'll hang out at the fountains that I always talk about. We also hope to make it up to the Free Store so I can dig for treasure there. Maybe even make it up to the Goodwill!
