Spring is here!



Spring is here and we have many updates....

1. As I said, my husband was laid off from the car dealership. He's decided to go back to school and will be starting at the local community college in a week, for Spring quarter! He will be going to school to become a teacher, hopefully landing a job at a Christian school eventually.

2. In early May we will be taking a trip over to Spokane, Wa. We will be checking out both of the community colleges there and my husband will decide which one will be best for him, and then enroll for Fall quarter. We will be attending the Messianic Congregation while there and finally, we will get a rental set up as well. Then we'll head home, pack up, and move to Spokane- so long as everything falls into place and it seems like the right move. Please pray that if this is the right thing for us, God will make it a clear and easy decision!

3. I attended my first birth as a labor doula. It was a great learning experience, however traumatic in that it ended an a Cesarian Section that I wasn't mentally prepared for. The treatment by the doctor and staff also surprised me and it left me feeling a whole ton of different emotions. I'm still healing from it all myself, while still trying to be there for support for my client as she heals too. Please pray for my client as she heals from major surgery and that she is able to continue enduring the pain of first-time breastfeeding.

4. I've been working out consistently, lifting weights 4x a week and trying to do cardio 2x a week. There is a visable improvement!!! I feel so good about myself, my depression has subsided for the most part and I feel much healthier than I was months ago. I was having some health issues at that time (I can't remember whether I blogged about that or not) but it seems most of what I was experiencing was a detox, as I was newly vegetarian and I had a lack of any physical exercise. I need to keep up on my vitamins and I think that will help things even more.

5. We had some dear friends from Oregon come stay with us for a day and visit. It was so much fun! We hope to make a trip down to see them in April, before we make the big move.

6. Davin is almost 10 months and Jaden is nearing 3 1/2. Life is great! Davin is just about to pop his first tooth and is very close to walking- oh and he CLIMBS!! On everything!! Jaden is nearing 3 1/2....Davin is turning out to be VERY different than Jaden. He doesn't nurse very much at all and he's overall a lot easier, although he sure is sensitive like her! lol And Jaden is nearing 3 1/2..... (get my flow???) LOL Jaden is just lovely, but this sure is an interesting age.

7. I got a rockin' haircut and I LOVE IT!!!!!!! I've had a handful of haircuts in my life, and only maybe one a year in the past 5. And NONE of them compare to this one. One of my client's mother cut it, she owns a hair salon. My husband loves it so much as well, that he said he'll pay for a cut there everytime we come back to visit!

Today I made Tempeh Tacos! Oh.My. yummy yummy yummy. If you want to impress someone, try these out!

I combined a couple recipes and improvised with what I had and didn't have. But I originaly found the recipe in Veganomicon (Another MUST OWN Vegan cookbook!). Here's what I did:

Make the Taco "slaw" first.
3 cups finely chopped cabbage
large handful of broccoli slaw mix (broccoli and carrots)
1/4 cup ACV
nice amount of salt
freshly ground pepper

mix well and cover with plastic wrap, pressing the wrap directly flat onto the slaw and then put it in the fridge, with something heavy directly on top of the slaw and wrap, to weigh it down. Keep it in there for at least an hour.

Then make the "Lime-ah Cream-ah" :)
sour cream (about 1/2-1 cup)
3 tbsp lime juice
1 tbsp oil
handful of chopped cilantro
salt

mix well and chill for an hour.

Then make the Marinade for the Tempeh:
3/4 cup of Mexican beer (I used Pacifico)
2 cloves of crushed garlic
2 tbsp oil
2 tbsp Braggs liquid Aminos
2 tbsp lime juice
3 tsp chili powder
1 tsp cumin

Mix well and set aside...

Cut up 8oz of tempeh into 4 slices and then cut each one in half, making 8.

Bring a pot of water to boil, then add your Tempeh to the boiling water. Turn the heat down and let it simmer for 10 minutes. Remove the Tempeh and add to the marinade. Cover it with the marinade and turn it often. Let marinade for at least an hour, overnight if possible.

Preheat oven to 200 and preheat a greased grill pan (brush well with oil or spray) over medium high heat... OR prepare a cast iron skillet with oil and preheat it. (I used the skillet). Add the Tempeh to the hot skillet and cook for 5 minutes on each side. I added some marinade over the top of them while they were cooking, from time to time. Then when you've cooked them on both sides, break the Tempeh all apart with a spatula and add most of your marinade to the skillet. Let it cook for another 30 seconds to a minute.

While your Tempeh is cooking, you want to warm up your corn tortillas. I like to use 2 together, because it's easier to keep together once all the goodies are on it.

Then add your Tempeh, slaw, lime-ah cream-ah, and topping of your choice. I used chopped onion, more chopped cilantro, Sharaka (rooster) sauce, avocado, and lots of lime juice.

Eat very fast and lick your plate clean. ;)

Hey! :) Your family is beautiful...

I know what you mean by 3.5 yr old-Trin was there last year. Now it's 4.5 with her, and 2.5 with Madelyn. In my bloggity those ARE pics of my Gabe. ;) I just don't want him to lose that cuteness when he hits 2.5!! Oh, the fits M is giving us! ;)

Praying for you with all the changes coming up...God will surely lead you in the right way and provide for you. *heart*
